The Wilderness Territory is seeking currently seeking a Sous Chef to join our fine dining team! Sous Chefs are part chef, part artist, and 100% dedicated to an exceptional and memorable culinary experience.  You’ll share your joy of nutrition, beautiful food presentation and accommodating service with those around you.  You’ll assist our Chef de Cuisine in upholding the brand image of the Wilderness Territory as place of wellness with a respect for the earth.

 This is a unique position, meaning our Sous Chef will be working in several different outlets and restaurants that are a part of our Wilderness Territory including Sundara Spa, Field’s, Sarentos, Wild Rock Golf Course and our Conference Center.

 Duties Include:

  • Preparing fresh cuisine following the recipes and portions set forth by Chef in a timely and safe manner with beautiful presentation, while maintaining optimum food cost
  • Responsible for last check of all plates leaving the kitchen
  • Assist with ordering all food and non-alcoholic beverages and taking inventory in an accurate and timely manner
  • Assist with daily cleaning of kitchen and storage rooms and waste management
  • Assist with periodic scheduled maintenance
  • Assist Chef with menu development and training for all staff
  • Assist Chef with creation and diagrams of all plate set-ups
  • Assist with scheduling Culinary staff
  • Assist Chef in procurement of necessary products
  • Participate in all other projects as requested by ChefA qualified candidate for this position must have:
  •  
  • Formal culinary education or extensive on-the-job training in a fine dining establishment; degree not required but preferred
  • Three years of professional food preparation experience
  • Knowledge of classical cooking techniques, including safe knife skills
  • Broad ingredient knowledge and an interest in learning about other cuisines
  • Participation in current food sanitation regulations with a clear understanding of “First-in, First-out” inventory practices and pantry management
